It’s not a cake. It’s not a pie. It must be a dessert.
I made this for our Beta meeting last night and an extra to take to work today. (Surprise, co-workers!)
This is one of my very favorite fall desserts. And, luckily, it’s real easy.
15 oz can pumpkin
12 oz can evaporated milk
3 eggs
1 c. sugar
4t. pumpkin pie spice
Mix above ingredients and pour into a greased 9x13” cake pan.
1 box yellow cake mix
1 c. melted butter
1 1/2 c. chopped walnuts (I omitted)
Sprinkle dry cake mix on top of pumpkin mixture. Drizzle melted butter on top of cake mix. Sprinkle with nuts if you desire.
Bake for 1 hour at 350 or until the knife comes out clean.

Yes Thank you!!! I will be trying this one SOON!!! I am addicted to pumpkin right now. btw...butter pecan cake mix works great with our favorite cupcake recipe...if you want to change it up a bit:)
